Serve over toast and season with salt and white pepper. Pour 1/4 cup batter onto a hot, lightly greased griddle. Cook over medium heat 1 to 2 minutes each side or until golden brown. Flip when top is bubbly and edges look slightly dry.
Unfold and ease into plate, pressing firmly against bottom and side and being careful not to stretch pastry, which will cause it to shrink when baked. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute as desired. This recipe makes eight 5-inch pancakes. Using a 1/3 cup measuring cup to drop batter will give you a perfect 5-inch round pancake.
How to freeze and reheat pancakes
Add egg mixture all at once to the dry mixture. Stir just until moistened . In a medium mixing bowl stir together the flour, sugar, baking powder, and salt.
